DIY Snack of the Week: Lemonade Jello
Ingredients:
- 1 (6-oz) pkg. lemon Jello (I used sugar free)
- 3/4 c. sugar
- 1 pinch salt
- 2 c. boiling water
- 6 ounces (half a container) frozen pink lemonade concentrate
- 2 c. (1 pint) whipping cream
Directions:
- Combine Jello, sugar and salt in a medium sized bowl. Add the boiling water; stir until Jello is completely dissolved. Add the lemonade concentrate. Chill until slightly set (like egg whites). With a hand mixer, whip to froth.
- Whip the whipping cream and fold into frothy Jello. Let set up in refrigerator. Scoop into bowls. Extra yummy paired with fruit. ENJOY!!

DIY Snack of the Week: Caramel Apple Dip
Ingredients:
- 1 (14-oz) bag caramel squares, unwrapped
- 1 (14-oz) can sweetened condensed milk, (I used fat free!)
1. Combine the unwrapped caramel squares and sweetened condensed milk in a medium-size microwaveable bowl.
2. Microwave for 1 minute. Stir. Continue to microwave at 30 second intervals, stirring in between. Mine took 3 minutes and 30 seconds to completely melt and get to the consistency I wanted.
3. When it's cooled down enough, pour into Mason jars or other sealed containers and store in the refrigerator.
OR enjoy with a sliced apple right away.

DIY Snack of the Week: A Yummy Green Smoothie
Ingredients:
- 1 cup plain nonfat yogurt OR Greek yogurt
- half of a banana
- 1 cup frozen peaches
- 3/4 cup halved strawberries
- 1/4 cup skim, almond or coconut milk
- 2 Tbsp. Splenda or agave sweetener
- 2 handfuls of spinach
- Add all ingredients in a blender and blend together on high. Depending on the strength of your blender, it might be easier to start by blending up the spinach and milk and then adding in the rest of the ingredients.

DIY Snack of the Week: Chili's Copycat Salsa and Chips
Ingredients:
2 cans (14.5 oz each) whole tomatoes, drained
3-4 canned, whole jalapenos (not pickled)
1 yellow onion, quartered
1 teaspoon garlic salt
1/2 teaspoon salt
1 teaspoon cumin
1/2 teaspoon sugar
2 teaspoons lime juice
Directions:
Place all of the ingredients together into a food processor or blender and puree until smooth. Serve with tortilla chips.
